I had no idea that there was a (rough looking) version of Railroad Tycoon for the Mac. I played the heck out of that in DOS back in the good old days.

I played a lot of that on the Mac
But of course, I spent way more time on Beyond Dark Castle.
My own list goes something like this:
Dark Castle & Beyond Dark Castle
Apache Strike
Cap'n Magneto
Cairo Shootout
Net Trek
Risk!
Shufflepuck
Bolo
Strategic Conquest
Theldrow
Lode Runner
Mac Sokoban
Glider

And then later Ambrosia games:

Escape Velocity / EVO
Avara
and Spectre and Marathon.

The Angry Video Game Nerd covered the Sega Genesis version of Dark Castle. It's very much a game of its time, I suspect.

I remember Bolo from back in the day. Taskmaker and Rescue will also always stand out for me, as well as Cliff Johnson's games.
Tong-Nou / Chu-Teng was a PPC exclusive, and it's too bad it will probably stay that way. But at least Deja Vu and Pegasus Prime can now easily be run just about anywhere.
