Good morning all !
Sorry silly question, but how do you rename an HDD (Untitled) under System 6.0.7 ? With the System 7.xxx I simply press the ENTER key & I can give another name... but here it does not work ?

First select the icon, then select the name label.

In the Finder, you click on the disk icon, then click on the text. Then you can edit it.
You can also use Get Info and edit the file name in the info box. Earlier versions of Mac OS didn't allow you to edit from the info box IIRC, and didn't display a text box when you clicked the text of the disk -- but typing still overwrote it.
